Caprese Orzo

Caprese Orzo

I recently came to the realization that a lot of my favorite recipes are born out of cravings. I'll crave something in particular and create a new dish around it. For example, my favorite sausage pasta dish came to life because I was feening for some Italian sausage. My all-time favorite dessert recipe was created because I really wanted a strawberry shortcake ice cream bar. And today's recipe was developed because I had a taste for a caprese salad! Everyone loves a good caprese salad, right? It's a fresh, simple dish that always hits the spot. I didn't think something so easy and delicious could get better but, you guys, I think my pasta version of it takes it to a whole new level. I love carbs so obviously I'll find any excuse to…

I love avocado toast so much, you guys. And I just realized I've never done an avocado toast food post, which is crazy because I have two amazing recipes for avocado spread that I've never shared. So today I"m doing just that. Have you guys seen the newest trend? People are making avocado toast on slabs of sweet potato and honestly, it's an amazing idea. It's perfect for all of the gluten-free people out there and sweet potatoes are so good so why not make it like toast?! And since we have a summer holiday coming up and holidays mean parties and parties mean finger foods, I thought I'd twist the trend and do party-perfect bites of sweet potato avocado toast! And then to make it even better - I'm showing you a savory…

Peanut Butter Mousse Cookies

Peanut Butter Mousse Cookies

I always forget how much I love peanut butter. I'll randomly crave a peanut butter and jelly sandwich from time to time and be reminded of my obsession with it. I mean it's the perfect food. It's good in a sandwich, with bananas, with celery, by the spoonful, on a cookie, but it is far and away the most amazing in mousse form. I love when bakeries put that fluffy peanut butter mousse in cakes and don't even get me started on peanut butter pies. But sometimes I just want a bite or two so instead of making a whole pie for myself, I came up with these adorable little mousse cookies! It's the perfect little bite and the semi-sweet chocolate balances out the sweetness from the mousse and cookie. My mouth is watering…

Korean BBQ Grilled Cheese Sandwich

Korean BBQ Grilled Cheese

When I lived in Los Angeles, I was in absolute food heaven. There wasn't a single food I wanted that I couldn't easily get. Every time I would explore a new area, I'd find more and more amazing foods to try but there was one area in particular that stole my heart. I know that most big cities have a Koreatown but none compare to the one in LA. There's so much to do and more importantly, so many yummy spots to eat at. The area has a great mix of traditional and trendy Korean restaurants and while I love all Korean food, I don't quite crave anything as much as I crave Korean BBQ. And if we're going to get really specific, I still dream about the BBQ spread at this LA spot…

Simple Kale and Farro Salad

Simple Kale and Farro Salad

Do you guys remember when kale first hit the food scene? People were all of a sudden so excited to eat vegetables again and every single restaurant you went to had some form of it on their menu. Even though people called kale a "food trend", it's definitely stuck around and I think it's helped pave the way to find even more ways to cook and eat vegetables. So let's all take a minute to appreciate what kale has done for all of us. I got hooked when the kale craze started and I'm still obsessed with it. My absolute favorite salad in the world is actually a kale salad (drooling right now thinking about it) so obviously when I can't have that one, I have to have a great alternative on hand to…

Chicken, Sausage, and Shrimp Jambalaya

Happy Mardi Gras! I can't even imagine the celebrations going on down in New Orleans today and I wish I was there! I've only been to NOLA once and it was just a quick little pit stop on my way to Texas so I didn't even really get the full experience but what I can say is that the food there is like a little slice of Creole heaven. Eating foods like crawfish and gumbo are like getting big hugs of love from a million people. It's the ultimate comfort food and something I wish I could eat every single day. And with it being Mardi Gras, I was especially craving all of this amazing food. So to celebrate today and satisfy my craving, I decided to make this delicious jambalaya packed with chicken,…

Easy Coconut Almond Sweet Rolls

Coconut Almond Sweet Rolls

As much as I love to eat, I'm not the biggest fan of breakfast. Don't get me wrong, I love my bacon and avocado toast but it's not really a meal I crave. Even when my friends and I go out for breakfast, we don't ever really go out for breakfast. It's usually brunch and closer to lunch so I end up eating things like a burger or pizza and completely ignore the actual breakfast side of the menu. The only exception to this is if the menu has waffles on it or a really good sticky bun. When I'm forced to eat breakfast, I will always say yes to something sweet. I don't think anyone can really resist sweets for breakfast - even if it's just a tiny nibble. Most people can say…

Korean BBQ Chicken x Garlic Bok Choy

Korean BBQ Chicken x Garlic Bok Choy

I never realized how much I love Korean food until I moved out of my parents' house. For 18 years, it was just so normal to me that I kind of got sick of it. I would complain to my parents about eating the same thing every single night while my friends all got to eat foods like spaghetti, McDonald's (really high standards here), Italian food, and burgers. Fast forward to independence and there would be days where I would absolutely CRAVE Korean food. It would be something so simple like kimchi and a bowl of rice but only that could satisfy the hunger and if I didn't get it, I would feel so empty. So I finally decided it was time I have a mini arsenal of Korean recipes - my favorite being,…

How To: Make Perfectly Fluffy White Rice

How To: Make Perfect Fluffy Rice

I've been making rice since I was old enough to help my mom and grandma in the kitchen, so it's fair to say I've gotten pretty good at making it perfectly fluffy. You know, the sticky rice that's not mushy - like the good kind you get in your Asian takeout orders! And surprisingly, cooking rice can go wrong real quick if you don't know what you're doing. Seems silly but I've been told so many times by so many people that they struggle to get their rice to that tender, fluffy, and sticky texture. So I'm sharing my little secret with you! You'll be shocked how simple it is! And you don't even need a pressure cooker! [yumprint-recipe id='15']

Sesame Honey Cashew Granola

Sesame Honey Cashew Granola

I give a lot of kudos to people who can eat yogurt without any toppings because it's nearly impossible for me to get through a bowl that doesn't have granola on top of it. It's just not as satisfying without that nice crunch and texture. Plus I like the extra flavor that granola adds. It's nutty and sweet but doesn't overpower the yogurt. Not to mention, you feel healthy eating it because it's oats and nuts... I mean, what could be so bad about oats and nuts? But good granola gets expensive so after years of throwing money at this delicious snack, I finally asked myself, "Min, why are you paying $8 for a bag of granola that you could easily make at home?" Great question. So I started making my own granola. While…
